Jackson Sanatorium - Dansville, NY
This sprawling, castle-like structure peering through the treeline overlooking the city of Dansville, NY is Jackson Sanatorium. Its story begins in 1854 when Dr. Caleb Jackson opened the institute as “Our Home on the Hillside” during a time when hydrotherapy - a practice using various water treatments to cure such ailments as anxiety, depressing, and stress - was a popular alternative medicine. Dr. Jackson also encouraged his patients to follow a strict diet emphasising fruits, vegetables, and unprocessed grains. His concoction of twice baked graham flour had to be soaked in water overnight later becoming granola, America’s first breakfast cereal. It went through many names and uses with the most recent being Bernarr Macfadden's Castle on the Hill, a hotel which operated until Labor Day, 1971.
